Hawaiian Chicken

1 teaspoon cornstarch
1 tablespoon cold water
1/2 cup sugar
1/2 cup soy sauce
1/4 cup vinegar
1 clove garlic (minced)
1/2 teaspoon ginger
1/2 teaspoon pepper
6 chicken breasts
1 (10 oz ) can pineapple

Directions: Spray a 9x13 inch pan with cooking spray. Place chicken in pan and put into a preheated 425°F oven. Bake for 30 minutes. While chicken starts to cook prepare sauce. In a small sauce pan, mix cornstarch and water. Then add sugar, soy sauce, vinegar, garlic, ginger and pepper. Cook over medium heat stirring until thick. Turn chicken and brush with sauce every 10 minutes for 30 minutes. Add pineapple the last 10 minutes of baking. Serve while hot with rice and a vegetable salad. Yields 6 servings.
