Wild Rice Soup

2 to 3 cups dry wild rice
1 cup water
1 (small) jar Cheese Whiz
8 slices bacon
1 (small) chopped onions
2 cans cream of potato soup
4 cups milk
2 tablespoons chopped parsley
croutons or shredded cheese for garnish

Directions: Cook rice in water. Fry bacon, cool and crumble. Saute onion in bacon grease. Stir rice, cheese whiz, bacon, onion, soup, parsley and milk together. Heat until cheese whiz is melted over low heat. Be careful to stir constantly as soup scorches easily. Serve in soup bowls with garnish of your choice.

Notes: This is a recipe I revised to suit my family's taste. It is great for a cold winter night.
