1 1/2 cups instant rice
1 1/2 cups water
1 (10 oz.) package frozen chopped broccoli
1/2 cup onion, chopped
1/2 cup celery, chopped
1/4 cup butter
1 (10 1/2 oz.) can condensed mushroom soup
1/2 (8 oz.) can sliced water chestnuts
2/3 cup processed American cheese sauce
2 cups chicken or turkey, cooked and chopped
mild Cheddar cheese, grated (optional)
Directions: Mix water and rice and prepare according to package directions. Cook and drain broccoli. Saute onion and celery in butter. Mix all ingredients together and put in a large casserole dish. Bake at 350°F for 30 minutes. Sprinkle grated cheese on top of casserole during the last few minutes of baking, if desired. Makes 6 to 8 servings.
Notes: This is our favorite main dish for company and Sunday dinners.
